HIST 081. The History of Food in the Modern Era

This mid-level course explores the transformation of the American diet from the end of the Civil War to the present day. Students will be invited to research topics including the life and training of chefs, the evolution of cooking methods and styles, and the tensions between science and pleasure in the effort to satisfy the American palate.
